Best Practices: Selling Cans & Crowlers™ To-Go

In food and beverage packaging, sanitization and limiting oxygen in your container is very important. Before you begin to fill and seal a can or Crowler™, we recommend sanitizing both the can and end using an acid-based no-rinse sanitizer. If you’re looking for a recommendation, Star San by Five Star will do the trick.

After you’ve sanitized your can or Crowler™, your goal is to fill the can with as little oxygen present as possible. A great best practice is CO2 purging the can. This can be accomplished by using a beer gun such as Blichmann® or The Last Straw®. If you don’t have a beer gun, you can leave a tap open and use a growler filling tube.

The best method that we’ve found for CO2 purging a can or Crowler™ is to slowly “breathe” the CO2 into the bottom of the can using your beer gun or empty tap. This will force the Oxygen inside the can or Crowler™ out of the top and prepare the can to be filled.

Bottom Fill, Cap on Foam or Liquid

When filling a can or Crowler™, the goal is to eliminate as much oxygen as possible. Using a bottom filler such as a beer gun, funnel (for cocktails, wine, or coffee), or growler filling tube is going to be your best bet.

After CO2 purging your can or Crowler™, place your filling “device” inside the can, as close to the bottom as possible. Fill the liquid in the can to the top in such a way that the end is “floating” a bit once you’ve placed it. In the case of beer, you’ll likely be capping on foam. For cocktails, wine, or coffee, you’ll want to push a bit of liquid’s meniscus out as you prepare the can to be sealed. 

Note: Keep in mind that it’s best to use cold liquid in this step to avoid your cans collapsing in the fridge or cooler after you’ve sealed them.

 

Seal the can or Crowler™

Sealing a can with an Oktober Can Seamer or Oktober Crowler™ Can Seamer couldn’t be easier.  After you’ve sanitized, CO2 purged, bottom filled, and “capped” your can or Crowler™ you’re ready to seam.

Oktober Can Seamers have a two-operation seaming process. After you’ve loaded the can, and closed the splash guard the machine is ready to be turned on. The first operation is completed by pulling the right handle inward until it reaches the hard stop. Once the handle doesn’t want to move in any further, you back it off and repeat the same step with the left handle. The entire process should take less than 10 seconds.
